So I have a HDTV, I wanna play on my HDTV and still record my Xbox 360 but I dont care if it's in HD quality or not. What do I need and how to I wire it up...

I've been wrestling with the same kind of problem and have finally found a solution. Use some sort of video unit with double scarts, one for in and one for out (such as a DVD or digital box or something).  I use a digital box. Plug the console to the in scart. In the out scart, plug a scart connector with I/O properties (there are those with a I/O switch) and both RCA and S-video connectors. Those can be bought in most Hi-Fi stores or such. Then simply plug the RCA to your EasyCap and the S-Video to your TV (or perhaps the other way around. Experiment with it). The audio can be plugged directly to the EasyCap (presumed you have 3 RCA plugs from the console). You won't get a HD picture for your TV, but you get picture both on your computer and TV, without quality loss. This works fine for me.
