EasyCap can capture PAL at a maximum resolution of 576i 25. I would recommend setting the PS3 to standard PAL (which is 576i), aspect ratio to 4:3 and the audio to output through the AV cable. Then set the EasyCap to PAL, 720 times 576, colour space to YUV2 and the frame rate to 25fps. The quality of the video you end up with will depend on how much compression and what type you use in the software you are using for capture.
